Ingredients/Components

  • eggs - 4 item
  • milk - 1/2 c
  • oil - 1/2 c
  • Cool Whip - 8 oz
  • yellow cake mix - 1 item
  • juice - 2/3 c
  • box vanilla instant pudding - 1 item
  • medium can pineapple - 1 item
  • large can Mandarin oranges - 1 item

How to make mandarin cake:

Mix cake mix, eggs, oil and 2/3 cup Mandarin juice. Fold in oranges and put in 9 x 13-inch pan. Cook 25 to 30 minutes at 350°. Cool 2 hours before icing.

Icing: Mix instant pudding and milk. Fold in Cool Whip and pineapple. Ice and refrigerate.
