Lemon meringue pie
Ingredients/Components
- sugar - 1 c
- salt - 1/4 tsp
- butter - 2 Tbsp
- cornstarch - 6 Tbsp
- water - 2 c
- grated lemon rind - 2 tsp
- egg yolks, slightly beaten - 3 item
- 9-inch baked pastry shell - 1 item
- lemon juice about 1 lemon - 5 Tbsp
- Add remaining water and when well blended, stir constantly over low heat until mixture boils
How to make lemon meringue pie:
Mix starch with 1/2 cup cold water in top of double boiler; blend in sugar and salt. Add remaining water and when well blended, stir constantly over low heat until mixture boils. Cover and cook over boiling water 10 minutes. Gradually pour hot mixture over beaten egg yolks, stirring constantly. Return to double boiler and cook 2 minutes longer. Remove from heat; add lemon juice, rind and butter. Mix. Cool. Add to crust.Meringue:3 egg whites6 Tbsp. sugar Whip until peaks form.
