  • sugar - 1 c
  • eggs - 2 item
  • vanilla - 1/2 tsp
  • milk - 2/3 c
  • butter or margarine - 6 Tbsp
  • salt - 1 tsp
  • flour - 3 c
  • baking powder - 4 tsp
  • shortening - 6 Tbsp
  • lemon juice - 1/3 c
  • grated lemon rind - 4 tsp
  • poppy seed - 1/4 c
  • Beat together eggs, lemon juice and milk; add to butter mixture

How to make lemon poppy seed muffins:

Cream together butter, shortening and sugar until light and fluffy. Beat together eggs, lemon juice and milk; add to butter mixture. Mix flour, baking powder and salt, then add to mixture. Stir in poppy seed and lemon rind. Pour batter 2/3 full into 12 greased muffin cups (about 26 mini-muffins). Bake at 350° for 20 minutes (10 to 15 for mini-muffins). Cool.Glaze:1 c. confectioners sugar1/2 c. lemon juice1/2 tsp. vanilla Mix and spoon over cooled muffins.
