Lemon poppy seed muffins
Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- vanilla - 1/2 tsp
- milk - 2/3 c
- butter or margarine - 6 Tbsp
- salt - 1 tsp
- flour - 3 c
- baking powder - 4 tsp
- shortening - 6 Tbsp
- lemon juice - 1/3 c
- grated lemon rind - 4 tsp
- poppy seed - 1/4 c
- Beat together eggs, lemon juice and milk; add to butter mixture
How to make lemon poppy seed muffins:
Cream together butter, shortening and sugar until light and fluffy. Beat together eggs, lemon juice and milk; add to butter mixture. Mix flour, baking powder and salt, then add to mixture. Stir in poppy seed and lemon rind. Pour batter 2/3 full into 12 greased muffin cups (about 26 mini-muffins). Bake at 350° for 20 minutes (10 to 15 for mini-muffins).
