  • pkg - 1 oz
  • boiling water - 1 c
  • lemon extract - 1 tsp
  • oil - 2/3 c
  • yellow cake mix without pudding - 1 item
  • eggs - 4 item
  • confectioners sugar - 1 c
  • juice of 1 lemon

How to make lemon cake:

Combine Jell-O and boiling water in a large bowl; stir until Jell-O is dissolved. Let cool. Add lemon extract, oil and cake mix, blending well. Beat in eggs.

Pour batter into greased and wax paper lined (on bottom) tube pan. Bake in a preheated 350° oven for 1 hour or until cake tests done. Let cool 10 minutes in pan. Remove to serving plate.

Combine confectioners sugar and lemon juice. Spoon over warm cake. Cool completely before serving.
