Easy carrot cake
Ingredients/Components
- cinnamon - 2 tsp

- milk - 1 tsp
- water - 1/2 c
- oil - 1/2 c
- grated carrots - 2 c
- confectioners sugar
- margarine, softened - 1/3 c
- yellow cake mix - 1 pkg
- finely chopped walnuts or pecans - 1/2 c
- can crushed pineapple, undrained - 1 oz
How to make easy carrot cake:
Frosting:2 (3 oz.) pkg. cream cheese, softened1/3 c. margarine, softened1 1/2 tsp. vanilla3 1/2 c. confectioners sugar1 tsp. milk Preheat oven to 350°. Grease and flour a 13 x 9 x 2-inch pan.For Cake: Combine cake mix, 1/2 cup water, 3 eggs, 1/2 cup oil, 1/2 cup chopped nuts, 1 can pineapple, 2 teaspoons cinnamon and 2 cups grated carrots in a large bowl. Beat at low speed with electric mixer until moistened. Beat at medium speed for 2 minutes. Pour into pan. Bake at 350° for 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool in pan.
For Frosting: Combine cream cheese, butter and vanilla in a large bowl. Beat at medium speed with electric mixer until smooth. Gradually add sugar and milk, mixing well after each addition. Spread on cooled cake. Store in refrigerator.
