Ingredients/Components
- salt to taste - 1 item
- fresh lemon juice - 2 Tbsp
- tahini - 1 Tbsp
- head garlic - 1 item
- chopped fresh parsley optional - 2 Tbsp
- can chickpeas, drained and rinsed or 2 c - 1 oz
How to make hummus:
Preheat oven to 425°. Remove loose papery outside skin from garlic head without separating the cloves. Slice off the top 1/2-inch. Wrap in small square of foil and roast 40 minutes until garlic is very soft. Unwrap and cool slightly. Separate cloves and peel.In a food processor, puree the garlic, chickpeas, lemon juice, soy sauce, tahini and about 2 tablespoons water. Transfer to boil and season with salt and add in parsley. May be made ahead and stored, covered, in fridge for up to 2 days. Serve with chopped tomatoes, olives and pita wedges.
