Ingredients/Components
- butter, softened - 1/2 c
- sugar - 2 c
- cinnamon - 1 tsp
- vanilla
- chopped pecans - 1/2 c
- pkg
- salt - 1 tsp
- oil - 1 c
- eggs, beaten - 3 item
- baking soda - 1 tsp
- plain flour - 3 c
- can crushed pineapple and juice - 1 oz
- chopped bananas - 2 c
How to make hummingbird cake:
Cream Cheese Frosting:1 (8 oz.) pkg. cream cheese, softened1/2 c. butter, softened1 (1 lb.) pkg. powdered sugar1/2 c. chopped pecans Combine the first 5 ingredients in large bowl. Add eggs and oil; mix until well moistened. Do not beat. Stri in vanilla, pineapple and bananas. Pour into three greased 9-inch cake pans. Bake at 350° for 25 to 30 minutes. Cool.Cream Cheese Frosting: Combine cream cheese and butter; beat well until smooth. Add sugar and vanilla; beat until light and fluffy. Spread between cake layers on top and sides. Sprinkle with pecans.
