  • sugar - 2 c
  • cinnamon - 1 tsp
  • vanilla
  • pkg - 2 oz
  • salt - 1 tsp
  • chopped nuts - 2 c
  • oil
  • soda - 1 tsp
  • eggs, beaten - 3 item
  • all-purpose flour - 3 c
  • margarine, softened - 1 c
  • can crushed pineapple, undrained - 1 oz
  • Add eggs and oil, stirring until dry ingredients are moistened
  • chopped bananas - 2 c

How to make hummingbird cake:

Combine dry ingredients in large mixing bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not heat. Stir in vanilla, pineapple, 1 cup chopped nuts and bananas. Spoon batter into 3 well-greased and floured 9-inch cake pans. Bake at 350° for 25 to 30 minutes. Cool. Spread frosting between layers and top and sides of cake. Put other cup of pecans on top.Hummingbird Frosting:2 (8 oz.) cream cheese, softened1 c. margarine, softened2 (16 oz.) pkg. powdered sugar2 tsp. vanilla Combine cream cheese and margarine. Cream until smooth. Add powdered sugar, beating until light and fluffy. Stir in vanilla.
