Hot and sour vegetable soup
Ingredients/Components
- water - 1 c
- vegetable oil - 2 Tbsp
- soy sauce - 2 Tbsp
- chicken broth - 4 c
- mushrooms, sliced - 2 c
- rice vinegar - 1/4 c
- garlic cloves, minced - 3 item
- bean sprouts - 1 c
- sesame oil - 2 tsp
- watercress - 1 c
- carrots, thinly sliced - 3 item
- snow peas - 1/2 lb
- ginger, minced - 1 Tbsp
- onion, slivered - 1 item
- dash of chili oil - 1 item
How to make hot and sour vegetable soup:
Heat oil in soup pot over medium heat. Add the onion and carrots. Stir for 3 minutes, then add the garlic and ginger. Cook and stir 1 minute longer. Add chicken broth, water and soy sauce. Bring to boil and cook for 1 minute. Add mushrooms and watercress; boil for 1 minute more.Turn off heat. Add the snow peas and bean sprouts. Cover 2 minutes. Stir in vinegar, sesame oil and chili oil to taste. Heat through 1 minute. Serve immediately.
