Ingredients/Components

  • water - 1 c
  • vegetable oil - 2 Tbsp
  • soy sauce - 2 Tbsp
  • chicken broth - 4 c
  • mushrooms, sliced - 2 c
  • rice vinegar - 1/4 c
  • garlic cloves, minced - 3 item
  • bean sprouts - 1 c
  • sesame oil - 2 tsp
  • watercress - 1 c
  • carrots, thinly sliced - 3 item
  • snow peas - 1/2 lb
  • ginger, minced - 1 Tbsp
  • onion, slivered - 1 item
  • dash of chili oil - 1 item

How to make hot and sour vegetable soup:

Heat oil in soup pot over medium heat. Add the onion and carrots. Stir for 3 minutes, then add the garlic and ginger. Cook and stir 1 minute longer. Add chicken broth, water and soy sauce. Bring to boil and cook for 1 minute. Add mushrooms and watercress; boil for 1 minute more.

Turn off heat. Add the snow peas and bean sprouts. Cover 2 minutes. Stir in vinegar, sesame oil and chili oil to taste. Heat through 1 minute. Serve immediately.
