Hollandaise sauce
Ingredients/Components
- egg yolks - 3 item
- dash pepper - 1 item
- c water - 1/4 item
- t salt - 1/8 item
- T lemon juice - 2 item
- cold butter, cut into chunks - 1/2 item
- t paprika - 1/8 item
How to make hollandaise sauce:
Whisk egg yolks, water and lemon juice together in a small saucepan. Cook and stir over low heat until mixture bubbles around the edges, about 20 minutes. add cold butter chunks to mixture one at a time, whisking after each addition until butter is incorporated into mixture. Stir in seasonings. Serve immediately. Yield: 1 cup.NOTE: Do not substitute margarine for butter in this recipe.
