Holiday mashed potatoes
Ingredients/Components
- milk - 1/2 c
- sour cream - 1/2 c
- salt - 1 tsp
- butter - 1/4 c
- dash of pepper - 1 item
- potatoes - 3 lb
- eggs, slightly beaten - 2 item
- cream cheese room temperature - 8 oz
How to make holiday mashed potatoes:
Peel and cook potatoes. While hot, mash potatoes in a large bowl until all lumps are gone. Chop the cream cheese into small pieces and add to potatoes along with butter. Beat well until butter and cheese are melted and completely mixed. Add sour cream. Combine milk and eggs. Add to potatoes with salt and pepper. Beat well until fluffy. Put in greased 9-inch round casserole and refrigerate several hours or overnight. Bake 45 minutes at 350° until lightly browned. Serves 8 to 12.Recipe categories: Side dish, Potato, Vegetables.
