Hearty vegetable soup
Ingredients/Components
- water - 8 c
- oil - 2 Tbsp
- 12 oz - 1 lb
- pepper - 1/8 tsp
- garlic clove, minced - 1 item
- chopped parsley - 2 Tbsp
- carrots, chopped - 4 item
- medium onion, sliced thin - 1 item
- dried thyme leaves - 1/2 tsp
- dried marjoram leaves - 1/2 tsp
- celery stalks, chopped - 2 item
- small cauliflowerets - 2 c
- pack frozen lima beans - 1 (10
- chicken or vegetarian bouillon cubes - 4 item
- ditalini-tubettini macaroni - 1 c
How to make hearty vegetable soup:
In 5-quart kettle on medium heat, heat oil. Add onion, celery and garlic; saute for 2 minutes or until tender. Stir in bouillon cubes, water and tomatoes with liquid, crushing tomatoes into little pieces. Over high heat, add carrots, cauliflowerets, lima beans, marjoram, thyme and pepper. Return to boiling, reduce heat and simmer uncovered for 15 minutes longer. Add parsley, if desired.Recipe categories: Vegan, Vegetables, Soups & stews.
