Hearty vegetable barley soup
Ingredients/Components
- water
- chopped onion - 1/2 c
- bay leaf - 1 item
- garlic clove, minced - 1 item
- lean ground beef - 1/2 lb
- sliced carrots - 1/2 c
- sliced celery - 1/2 c
- 9 oz - 1 pkg
- crushed basil - 1/2 tsp
- unsalted whole tomatoes undrained, cut into pieces - 1 can
- quick pearl barley or rice - 3/4 c
- Beef Bouillon cubes - 2 item
How to make hearty vegetable barley soup:
Brown meat in Dutch oven. Add onion & garlic till onion is tender. Drain. Stir in remaining ingredients except frozen vegetables. Cover, bring to a boil. Reduce heat and simmer for 10 minutes. Stir occasionally. Add frozen vegetables. Cook for 10Recipe categories: Soups & stews, Beans, Black beans.
