Hearty vegetable barley soup
Ingredients/Components
- water - 7 c
- vegetable oil - 1 Tbsp
- clove garlic, minced - 1 item
- bay leaf - 1 item
- onion, chopped - 1/2 c
- sliced carrots - 1/2 c
- sliced celery - 1/2 c
- beef bouillon cubes - 4 item
- pearl barley - 1/2 c
- can cut green beans undrained - 1 oz
- crushed basil leaves - 1/2 tsp
- beef stew meat, cut in 1/2-inch cubes - 1 lb
- can whole tomatoes, cut into pieces undrained - 1 oz
How to make hearty vegetable barley soup:
In a 4-quart saucepan, brown meat in oil. Add onion and garlic; continue cooking until onion is tender. Drain. Stir in remaining ingredients except green beans. Cover; bring to a boil. Reduce heat; simmer 50 minutes, stirring occasionally. Add green beans; continue cooking about 10 minutes. Add water if soup becomes too thick upon standing.
