Hearty vegetable and bean soup
Ingredients/Components
- dried Great Northern beans - 3/4 c
- water
- salt - 1 tsp
- chopped onion - 1/2 c
- chopped fresh parsley - 1/4 c
- chopped fresh celery leaves - 2 Tbsp
- olive oil - 1 Tbsp
- can ready to serve beef broth - 1 1/2
- can whole tomatoes, undrained and chopped - 1 1/2
- peeled, diced potato - 1 c
- diced celery - 1 c
- diced carrot - 3/4 c
- dried whole thyme - 1/2 tsp
- shredded cabbage - 2 c
- dried whole basil - 1 tsp
- chopped zucchini - 2 c
How to make hearty vegetable and bean soup:
Sort and rinse beans; place in a large Dutch oven. Cover with water, 2-inches above beans; bring to a boil. Remove from heat and let stand 1 hour. Drain off water, reserving beans in Dutch oven.
