  • salt - 1 tsp
  • all-purpose flour - 1/4 c
  • milk, divided - 3 c
  • margarine - 2 Tbsp
  • hot water - 2 c
  • pepper - 1/4 tsp
  • chopped onion - 1/2 c
  • chopped celery - 3/4 c
  • parsley flakes - 2 tsp
  • diced pimiento - 2 Tbsp
  • chicken bouillon cubes - 2 item
  • peeled and cubed potatoes - 6 c

How to make hearty potato soup:

Combine first 8 ingredients in Dutch oven. Dissolve bouillon cubes in hot water; add to potato mixture. Bring to a boil over medium heat. Cover, reduce heat and simmer 8 minutes or until vegetables are tender. Dissolve flour in 1/4 cup of milk; stir into soup. Add remaining milk. Cook over medium heat until thickened, about 25 minutes. Makes 10 servings.
