Hearty potato soup
Ingredients/Components
- salt - 1 tsp
- all-purpose flour - 1/4 c
- milk, divided - 3 c
- margarine - 2 Tbsp
- hot water - 2 c
- pepper - 1/4 tsp
- chopped onion - 1/2 c
- chopped celery - 3/4 c
- parsley flakes - 2 tsp
- diced pimiento - 2 Tbsp
- chicken bouillon cubes - 2 item
- peeled and cubed potatoes - 6 c
How to make hearty potato soup:
Combine first 8 ingredients in Dutch oven. Dissolve bouillon cubes in hot water; add to potato mixture. Bring to a boil over medium heat. Cover, reduce heat and simmer 8 minutes or until vegetables are tender. Dissolve flour in 1/4 cup of milk; stir into soup. Add remaining milk. Cook over medium heat until thickened, about 25 minutes.
