Ingredients/Components

  • milk - 1 Tbsp
  • salt - 1/2 tsp
  • flour - 2/3 c
  • butter - 3/4 c
  • shortening - 7 Tbsp
  • egg yolk - 1 item
  • chicken broth
  • frozen peas - 1 c
  • ice water - 3 Tbsp
  • salt and pepper to taste - 1 item
  • small onion, diced - 1 item
  • medium potatoes, diced - 3 item
  • cooked chicken, cut into bite size pieces - 4 c
  • carrots, pared and diced - 3 item

How to make hearty chicken pie:

Crust:1 c. flour1/2 tsp. salt7 Tbsp. shortening3 Tbsp. ice water1 egg yolk1 Tbsp. milk Combine broth, onion, carrots and potatoes; cook until almost tender. Add peas and cook 5 minutes. Remove vegetables from broth. Reserve vegetables. Strain broth and set 4 cups aside. Melt butter and whisk in flour. Cook, stirring constantly, for 2 minutes. Gradually whisk in hot chicken broth. Cook until mixture thickens and bubbles 1 minute. Season with salt and pepper. Combine chicken, vegetables and sauce mixture and place in 2-quart baking dish.

Crust: Mix flour, salt and shortening to form crumbs. Add water, one tablespoon at a time, and mix with fork. Knead on lightly floured surface until dough is smooth. Wrap in wax paper and chill 1 hour.

Preheat oven to 400°. Roll dough to completely cover the baking dish, plus 1-inch. Fit dough over filling, tucking in edges. Press dough against side of dish with fork to seal. Cut a small hole in center as steam vent. Combine egg yolk and milk; brush on pie. Bake for 40 minutes or until crust is brown and filling is bubbly. Serves 6 to 8.
