Hawaiian chicken
Ingredients/Components
- brown sugar - 1/4 c
- cornstarch - 2 Tbsp
- vinegar - 3 Tbsp
- soy sauce - 1 Tbsp
- pineapple chunks - 14 oz
- ginger optional - 1/2 tsp
- green pepper, seeded and sliced - 1 item
- to 3 chicken breasts, cooked and cut into bite size - 2 item
How to make hawaiian chicken:
Drain pineapple chunks, reserving juice. Add enough water to juice to make 1 1/4 cups liquid. In 2-quart casserole, thoroughly combine brown sugar, cornstarch and ginger. Stir in soy sauce, vinegar and pineapple juice. Microwave, uncovered, on Full power for 4 to 5 minutes or until mixture boils and thickens, stirring 3 times. Stir in chicken, green pepper and pineapple. Microwave, covered, on Full power for 5 to 6 minutes or until well heated, stirring once or twice. Let stand, covered, 5 minutes. Serves 4. Serve over rice.Note: Cooking times may vary depending on power of microwave.
