Ingredients/Components

  • garlic powder - 1/2 tsp
  • freshly ground black pepper to taste - 1 item
  • nonfat "butter" granules - 4 tsp
  • medium baking potatoes, scrubbed and baked - 6 item

How to make healthy potato skins:

Preheat oven to 450°. Reconstitute the "butter" granules according to the directions on the package. Cut each potato in half. Scoop out the center, leaving about 1/4-inch of potato on the inside of each skin. (Use leftover potato to make Shepherd's Pie.) Cut skins into quarters. Dab liquid butter substitute onto the white side of each potato skin. Sprinkle with garlic powder and pepper, if desired. Place prepared skins, skin side down, on a baking sheet. Bake 15 minutes or until lightly browned. Turn skins over and bake another 5 minutes or until crisp. Serve immediately. Serves 12; 4 per serving.
