Ingredients/Components

  • salt - 1/2 tsp
  • pepper - 1/4 tsp
  • chopped onion - 1/2 c
  • nonfat cottage cheese - 1/2 c
  • vegetable cooking spray - 1 item
  • can chopped green chiles, drained - 1 oz
  • ground bay leaves - 1/4 tsp
  • cooked long grain rice, cooked without salt or fat - 2 c
  • shredded reduced fat sharp Cheddar cheese - 3 oz
  • carton sour cream nonfat - 1 oz

How to make green chile rice:

Coat a skillet with cooking spray. Place over medium heat until hot. Add onions. Saute until tender. Stir in rice and next 6 ingredients. Add 1/2 Cheddar cheese. Spoon mixture into 1-quart casserole. Bake at 375° for 30 minutes. Sprinkle with remaining cheese. Bake 5 minutes more.
