Green chile rice
Ingredients/Components
- salt - 1/2 tsp
- pepper - 1/4 tsp
- chopped onion - 1/2 c
- nonfat cottage cheese - 1/2 c
- vegetable cooking spray - 1 item
- can chopped green chiles, drained - 1 oz
- ground bay leaves - 1/4 tsp
- cooked long grain rice, cooked without salt or fat - 2 c
- shredded reduced fat sharp Cheddar cheese - 3 oz
- carton sour cream nonfat - 1 oz
How to make green chile rice:
Coat a skillet with cooking spray. Place over medium heat until hot. Add onions. Saute until tender. Stir in rice and next 6 ingredients. Add 1/2 Cheddar cheese. Spoon mixture into 1-quart casserole. Bake at 375° for 30 minutes. Sprinkle with remaining cheese. Bake 5 minutes more.Recipe categories: Side dish, Pasta, rice and grains, Rice.
