Ingredients/Components

  • dry white wine - 1 c
  • salt and pepper to taste - 1 item
  • dried oregano - 1/2 tsp
  • juice of 1 lemon
  • onions, thinly sliced - 2 item
  • tomatoes, sliced - 3 item
  • chicken broth canned - 1 c
  • to 8 chicken breasts - 4 item
  • minced cloves garlic - 2 item
  • lite olive oil - 2 Tbsp
  • can whole tomatoes, drained - 1 oz
  • mixed fresh parsley, divided - 1 c

How to make greek-style chicken:

Coat a 9 x 13-inch baking dish with 2 tablespoons of olive oil (not in recipe). Preheat oven to 350°. Wash chicken and pat dry. Spread half of parsley on bottom of pan. Arrange chicken on parsley, season to taste with salt and pepper. Squeeze lemon over chicken.

In large bowl, combine onions, garlic, remaining parsley, canned tomatoes, wine, chicken broth and olive oil. Mix well and pour over chicken. Arrange tomato slices on top and sprinkle with oregano. Bake in hot oven 45 minutes. Baste occasionally. Makes 6 to 8 servings.

Also, delicious with any white meat fish; substitute chicken broth with fish broth.
