Ingredients/Components
- potatoes with skins, sliced - 6 item
- small yellow squash or green zucchini - 2 item
- medium onion, chopped - 1 item
- zest of 1 lemon
- juice of 1/2 lemon
- fresh oregano - 1 item
- tomatoes, sliced - 2 item
- Feta cheese - 6 oz
- olive oil - 1 item
How to make greek potatoes:
Combine potatoes, onion, squash, lemon zest and juice in oiled 9 x 13 glass baking dish. Cover with sliced tomatoes. Sprinkle with Feta and oregano and drizzle with olive oil. Season with salt and pepper. Bake 1 hour at 375°. Uncover and bake 10 to 15 additional minutes.Recipe categories: Side dish, Vegetables, Greek.
