Ingredients/Components

  • salt - 2 tsp
  • lemon juice - 4 Tbsp
  • chopped onion - 1/2 c
  • chopped celery - 2 c
  • tomatoes, chopped - 2 item
  • olive oil - 1/2 c
  • tomato juice - 6 c
  • croutons - 1 item
  • cucumbers, chopped - 2 item
  • Tabasco - 1/2 tsp
  • cans beef broth - 2 item
  • bell peppers, chopped - 2 item
  • Ortega chilies, chopped - 4 item

How to make gazpacho:

Put oil, lemon juice, onion, celery, Tabasco, salt, peppers and chilies in blender or food processor. Add beef broth and process. Put tomato juice in a gallon container. Add mixture from blender and stir. Put chopped cucumber and tomatoes on top. Refrigerate. Stir before ladling into bowls. Serve with croutons on top. Makes a delicious summer meal.
