Ingredients/Components
- eggs - 2 item
- salt - 1/4 tsp
- butter - 2 Tbsp
- Bisquick - 5 Tbsp
- pepper - 1/8 tsp
- Parmesan cheese - 1/2 c
- zucchini - 2 c
How to make zucchini fritters:
In a bowl, blend together the Bisquick, Parmesan cheese, salt and pepper. Add 2 eggs. Grate the zucchini and add to the mixture, making a batter. In a large frypan or pancake griddle, melt 2 tablespoons butter. Pour batter into pancake size. Fry 3 minutes on each side. Serve while warm.
