Fruit salad
Ingredients/Components
- sugar - 4 Tbsp
- cornstarch - 2 Tbsp
- eggs, beaten - 2 item
- frozen whipped topping, thawed - 2 c
- miniature marshmallows - 2 c
- lemon juice - 2 Tbsp
- can pineapple chunks, drained - 1 item
- can fruit cocktail, drained - 1 item
- can mandarin orange segments, drained - 1 item
- banana, sliced - 1 item
- large apple, diced larger pieces with peeling on - 1 item
- juice reserved from fruits - 1 c
How to make fruit salad:
In large bowl, combine apple and banana with lemon juice. Add canned fruits and marshmallows. In saucepan, combine eggs, sugar, cornstarch and fruit juice. Cook over medium heat until thick, stirring constantly. Remove from heat and cool. Toss lightly with fruit. Fold in whipped topping.
