Fresh vegetable casserole
Ingredients/Components
- butter or margarine - 2 Tbsp
- pepper - 1/4 tsp
- grated Parmesan cheese - 1/3 c
- diced onion - 1 Tbsp
- 4 oz - 1 c
- mayonnaise - 1 c
- basil - 1 Tbsp
- parsley - 1 Tbsp
- sliced carrots
- sliced celery - 1 c
- broccoli florets - 2 c
- saltine crackers, crushed - 12 item
- sliced green peppers - 1/2 c
How to make fresh vegetable casserole:
Steam broccoli and carrots until crisp and tender. Set aside.In a large bowl, mix together mayonnaise, Cheddar cheese, pepper and celery. Add the broccoli, carrots, remaining vegetables, parsley and basil gently to the mix. Spoon into a 2-quart casserole dish.
Melt butter or margarine in a small saucepan. Add the crushed saltines; stir until browned. Remove from the heat and stir in the Parmesan cheese. Sprinkle over vegetables. Bake, uncovered, at 350° for 40 minutes. Yields 8 servings.
