  • butter or margarine - 2 Tbsp
  • pepper - 1/4 tsp
  • grated Parmesan cheese - 1/3 c
  • diced onion - 1 Tbsp
  • 4 oz - 1 c
  • mayonnaise - 1 c
  • basil - 1 Tbsp
  • parsley - 1 Tbsp
  • sliced carrots
  • sliced celery - 1 c
  • broccoli florets - 2 c
  • saltine crackers, crushed - 12 item
  • sliced green peppers - 1/2 c

How to make fresh vegetable casserole:

Steam broccoli and carrots until crisp and tender. Set aside.

In a large bowl, mix together mayonnaise, Cheddar cheese, pepper and celery. Add the broccoli, carrots, remaining vegetables, parsley and basil gently to the mix. Spoon into a 2-quart casserole dish.

Melt butter or margarine in a small saucepan. Add the crushed saltines; stir until browned. Remove from the heat and stir in the Parmesan cheese. Sprinkle over vegetables. Bake, uncovered, at 350° for 40 minutes. Yields 8 servings.
