Fresh vegetable basil soup
Ingredients/Components
- butter or margarine - 3 Tbsp
- Parmesan cheese - 1 item
- salt and pepper - 1 item
- medium onion, chopped - 1 item
- small zucchini, sliced - 2 item
- large carrot, sliced - 1 item
- large stalk celery, sliced - 1 item
- small head cauliflower, broken into flowerets - 1/2 item
- large potato, peeled and cubed - 1 item
- large tomatoes, peeled and diced - 2 item
- vegetable stock * - 4 c
- coarsely chopped fresh basil or 1 tsp - 3 Tbsp
- fresh green peas or 8 oz - 1/2 lb
How to make fresh vegetable basil soup:
Melt butter. Add onion, celery and carrot. Cook until soft (about 10 minutes). Add potato, tomatoes, vegetable stock and basil. Bring to a boil. Cover and simmer 15 minutes. Add cauliflower and zucchini. Simmer for 10 more minutes. Add peas. Simmer another 5 minutes or until all vegetables are tender. Serve with Parmesan cheese.*I use Knorr vegetable soup mix with 4 cups of water for the vegetable stock.
