  • butter or margarine - 2 Tbsp
  • salt - 1/2 1
  • pepper - 1/8 tsp
  • grated Parmesan cheese - 1 item
  • cans chicken broth - 3 3/4
  • basil - 1/2 tsp
  • large garlic clove, crushed - 1 item
  • sliced celery - 1 c
  • thyme - 1/2 tsp
  • tomatoes, peeled and diced - 1 c
  • thinly sliced green onions - 1 c
  • coarsely chopped cabbage - 1 c
  • thinly sliced small carrots - 1 c
  • toasted Italian bread - 1 item

How to make italian vegetable soup:

In large saucepan, saute onions and garlic in butter or margarine for 3 minutes. Add chicken broth, tomatoes, carrots, celery, cabbage, salt, thyme, basil and pepper; simmer for 15 minutes. Serve in bowls topped with toast and sprinkled with cheese. Makes 4 to 6 servings.
