Italian vegetable soup
Ingredients/Components
- butter or margarine - 2 Tbsp
- salt - 1/2 1
- pepper - 1/8 tsp
- grated Parmesan cheese - 1 item
- cans chicken broth - 3 3/4
- basil - 1/2 tsp
- large garlic clove, crushed - 1 item
- sliced celery - 1 c
- thyme - 1/2 tsp
- tomatoes, peeled and diced - 1 c
- thinly sliced green onions - 1 c
- coarsely chopped cabbage - 1 c
- thinly sliced small carrots - 1 c
- toasted Italian bread - 1 item
How to make italian vegetable soup:
In large saucepan, saute onions and garlic in butter or margarine for 3 minutes. Add chicken broth, tomatoes, carrots, celery, cabbage, salt, thyme, basil and pepper; simmer for 15 minutes.
