Ingredients/Components

  • milk - 2 c
  • flour - 3 Tbsp
  • dry mustard - 1/2 tsp
  • ketchup - 2 Tbsp
  • salt and pepper - 1 item
  • can tomato soup - 1 item
  • parsley - 3 Tbsp
  • bottle clam juice - 1 item
  • shredded cheese - 3/4 lb
  • cans sliced potatoes - 2 item
  • large can tomatoes with juice - 1 item
  • fresh whitefish any mild variety - 1 lb
  • large onion, sliced into bite size pieces - 1 item
  • butter more, if needed - 3 Tbsp

How to make fish chowder:

In a large soup kettle/pan, saute onion 3 or more minutes. Add clam juice and juice from the potatoes. Add diced fish. Cook 15 minutes on medium-high until fish is mostly done. Add potatoes and turn heat down to medium-low.

In a separate saucepan, make roux by mixing butter with flour. Mix thoroughly. Add soup, cheese, mustard, milk and ketchup. Stir until completely melted. Do not boil. Add cheese mixture to fish. Cut tomatoes into bite size pieces. Add to soup with parsley, salt and pepper.
