Ingredients/Components
- milk - 1/2 c
- salt - 1/2 tsp
- eggs, beaten - 2 item
- baking powder - 1 tsp
- vegetable oil - 1 item
- all-purpose flour - 1 c
- large eggplant - 1 item
How to make eggplant fritters:
Peel eggplant and cut into finger-sized strips. Set aside.Combine flour, baking powder and salt in a small bowl, mixing well. Add milk, eggs and 1 teaspoon vegetable oil, stirring until smooth. Dip eggplant strips into batter. Fry in hot oil (375°) until golden brown. Drain on paper towels. Yields 8 servings.
