Eggplant dressing
Ingredients/Components
- salt - 1/2 Tbsp
- melted butter - 3 Tbsp
- small can evaporated milk - 1 item
- onion, finely chopped - 1/4 c
- green pepper, chopped - 1/4 c
- eggs, slightly beaten - 2 item
- chopped pimento - 1 Tbsp
- celery, chopped - 1/4 c
- Cheddar cheese, grated - 2 oz
- cornbread - 1 c
- pinch of sage - 1 item
- small eggplant, peeled and diced - 1 item
- thin sliced white bread remove crust - 1 item
How to make eggplant dressing:
Soak eggplant overnight in saltwater. Steam until almost done, about 20 minutes. Drain. Soak white bread and cornbread in milk. Saut?© onion, green peppers and celery in butter about 15 minutes. Combine bread, eggplant, saut?©ed vegetables, pimento, eggs and seasonings and mix well. Pour in buttered baking dish and top with cheese.
