Ingredients/Components

  • salt - 1/2 Tbsp
  • melted butter - 3 Tbsp
  • small can evaporated milk - 1 item
  • onion, finely chopped - 1/4 c
  • green pepper, chopped - 1/4 c
  • eggs, slightly beaten - 2 item
  • chopped pimento - 1 Tbsp
  • celery, chopped - 1/4 c
  • Cheddar cheese, grated - 2 oz
  • cornbread - 1 c
  • pinch of sage - 1 item
  • small eggplant, peeled and diced - 1 item
  • thin sliced white bread remove crust - 1 item

How to make eggplant dressing:

Soak eggplant overnight in saltwater. Steam until almost done, about 20 minutes. Drain. Soak white bread and cornbread in milk. Saut?© onion, green peppers and celery in butter about 15 minutes. Combine bread, eggplant, saut?©ed vegetables, pimento, eggs and seasonings and mix well. Pour in buttered baking dish and top with cheese. Bake at 375° for 20 minutes.
