Eggplant casserole
Ingredients/Components
- eggs - 4 item
- milk
- salt - 1 tsp
- pepper - 1/2 tsp
- cracker crumbs
- stick margarine, melted - 1 item
- eggplant - 1 item
- grated sharp cheese
How to make eggplant casserole:
Cook eggplant until mushy; drain. Add remaining ingredients, reserving 1/2 cup cheese, 1/2 cup crumbs and small amount of margarine. Mix well.Pour into a baking dish. Sprinkle with reserved cheese, crumbs and margarine. Bake at 325° to 350° for 30 minutes.
