Ingredients/Components

  • eggs - 5 item
  • salt - 1/4 tsp
  • cornstarch - 2 Tbsp
  • boiling water - 2 c
  • soy sauce - 1 tsp
  • minced onion - 3/4 c
  • mushrooms fresh or canned - 1 c
  • bean sprouts, chopped - 1 c
  • shredded cooked chicken, pork, shrimp, lobster or crab - 1 c
  • Add onion, meat or fish, sprouts and seasonings

How to make egg foo yong:

Slice mushrooms thin; saute in butter or margarine for 3 minutes. Add onion, meat or fish, sprouts and seasonings. Add this to the well beaten eggs; blend well. Drop from large spoon into frying pan with about 1/4 inch of hot fat. Brown one side; turn and brown other side. Serve hot with Chinese Sauce.Chinese Sauce:2 bouillon cubes2 c. boiling water2 Tbsp. cornstarch2 Tbsp. soy sauce Dissolve bouillon in boiling water. Blend cornstarch and soy sauce; stir into bouillon. Cook, stirring, until sauce is thickened and clear. Serve with rice or chow mein noodles.
