Ingredients/Components

  • flour
  • sugar
  • baking soda
  • cinnamon
  • salt - 1/4 tsp
  • each jars strained carrots - 2 1/2
  • oil - 2/3 c
  • eggs, slightly beaten - 2 item
  • vanilla - 1/2 tsp
  • can crushed pineapple, drained - 1 oz
  • coconut - 2/3 c
  • chopped walnuts - 1/2 c
  • Add carrots, oil, eggs and vanilla
  • butter or margarine, softened - 1/4 c
  • confectioners sugar - 2 c

How to make easy carrot cake:

Mix flour, sugar, baking soda, cinnamon and salt with a fork in a 9-inch square pan. Add carrots, oil, eggs and vanilla. Mix briskly with fork until thoroughly blended. Stir in pineapple, coconut and walnuts. Bake in a 350° oven for 40 to 45 minutes until done. Place the pan on a rack to cool. Spread with frosting.Cream Cheese Frosting:1 (3 oz.) pkg. cream cheese, softened1/4 c. butter or margarine, softened1/2 tsp. vanilla2 c. confectioners sugar Cream the cheese, butter and vanilla until well blended. Add sugar; beat until smooth.
