Ingredients/Components

  • low fat cream cheese, softened - 12 oz
  • vanilla - 1 tsp
  • water - 2/3 C
  • low fat cottage cheese - 1/2 C
  • large graham cracker crust - 1 item
  • maple syrup - 1 Tbsp
  • lemon juice - 2 Tbsp
  • liquid fructose - 1 Tbsp
  • Knox gelatine - 1 pkg

How to make diabetic cheesecake:

Dissolve gelatine in water; set aside. Beat cottage cheese to just reduce curds. Beat cream cheese; then gelatine. Mix well. Add vanilla, lemon juice, maple syrup, fructose and Sweet 'n Low. Mix well. Pour into shell and chill for 2-3 hours.
