Ingredients/Components
- low fat cream cheese, softened - 12 oz
- vanilla - 1 tsp
- water - 2/3 C
- low fat cottage cheese - 1/2 C
- large graham cracker crust - 1 item
- maple syrup - 1 Tbsp
- lemon juice - 2 Tbsp
- liquid fructose - 1 Tbsp
- Knox gelatine - 1 pkg
How to make diabetic cheesecake:
Dissolve gelatine in water; set aside. Beat cottage cheese to just reduce curds. Beat cream cheese; then gelatine. Mix well. Add vanilla, lemon juice, maple syrup, fructose and Sweet 'n Low. Mix well. Pour into shell and chill for 2-3 hours.Recipe categories: Cheesecake, Desserts, Diabetic.
