  • vanilla - 2 tsp
  • eggs, separated - 4 item
  • cream of tartar - 1/2 tsp
  • lemon juice - 2 Tbsp
  • orange juice
  • Equal - 12 pkg
  • 16 oz - 2 c
  • envelopes Knox gelatine - 2 item
  • fresh strawberries optional - 1 item

How to make diabetic cheesecake:

In a medium saucepan, beat egg yolks and orange juice together. Sprinkle with gelatine. Let stand 1 minute. Cook over medium heat, stirring constantly, until gelatine is dissolved, about 5 minutes. Remove from heat. Stir in sweetener, lemon juice and flavoring. Pour into blender or food processor. Cover and blend at high speed until smooth, about 30 seconds. Chill, stirring occasionally, until mixture mounds slightly when dropped from spoon, about 45 minutes.

In a large bowl, beat egg whites with cream of tartar at high speed until stiff. Gently fold chilled gelatine into whites. Pour into an 8 or 9-inch spring-form pan or 10-inch pie plate sprayed with Pam. Chill until set; overnight is better. Garnish with fresh strawberries.
