cream cheese

brown sugar - 1 Tbsp
water - 1 c
vinegar
mayonnaise - 1 item
salt to taste - 1 item
onion - 1 item
medium cucumber - 1 item
pimento, chopped - 1 item
very thin sandwich bread, cut into rounds - 1 item
cucumber, thinly sliced and cut into rounds - 1 item
dashes ground cayenne pepper - 2 item
dash of ground cayenne pepper - 1 item

How to make cucumber sandwiches:

Marinade:1 c. vinegar1 c. water1 Tbsp. brown sugar1/2 tsp. salt2 dashes ground cayenne pepper Spread:6 oz. cream cheese1 medium cucumber1 onion salt to taste1 dash of ground cayenne pepper mayonnaise Combine marinade ingredients. Add cucumber rounds. Let stand 1/2 hour. Remove cucumber and place on absorbent paper. Pat dry.

For spread, mash cream cheese with a fork. Grate cucumber and onion into a fine sieve. Press out juice and combine with the cream cheese. Add salt and cayenne. Add mayonnaise to spreading consistency. Spread bread rounds with cream cheese mixture. Top with cucumber rounds. Garnish with pimento.
