Ingredients/Components

  • cooked white or brown rice - 1 c
  • shredded low-fat Swiss cheese 3 oz - 3/4 c
  • flour - 1 Tbsp
  • pkg - 1 oz
  • sliced mushrooms - 1/2 c
  • chopped green onion - 1/4 c
  • red pepper, thinly sliced - 1 item
  • egg substitute
  • skim milk - 1 c
  • hot pepper sauce - 1/2 tsp
  • salt - 3/4 tsp
  • basil - 1/2 tsp
  • pepper - 1/4 tsp
  • Parmesan cheese - 2 Tbsp

How to make crustless vegetable quiche:

In large bowl, combine rice, Swiss cheese, flour, broccoli, mushrooms and onions. Place in 10-inch pie plate sprayed with vegetable oil spray. Top vegetable mixture with red pepper slices.

In medium bowl, combine eggs, milk, hot pepper sauce, salt, basil and pepper. Pour egg mixture over vegetable mixture; sprinkle with Parmesan cheese on top. Bake at 350° for 55 minutes. Makes 8 servings.
