Crunchy chicken salad
Ingredients/Components
- lemon juice - 1 Tbsp
- can water chestnuts, drained and chopped - 1 oz
- chopped celery - 1 c
- mayonnaise - 1 c
- small onion, chopped - 1 item
- hard-cooked eggs, chopped - 3 item
- chopped, cooked chicken
- jar diced pimento, drained - 1 oz
- chopped pecans, toasted - 1 c
- seedless green grapes, halved - 1 c
- sweet pickles, cubed - 1 c
- pimento-stuffed olives, chopped - 1/2 c
- can pineapple tidbits, drained and chopped - 1 oz
How to make crunchy chicken salad:
Combine all ingredients; blend well. Chill. Serve on lettuce cups or use for sandwiches.I cut the recipe in half. Yield: 12 servings.
