Creole green beans
Ingredients/Components
- sugar - 1/2 tsp
- salt - 1/8 tsp
- vegetable oil - 2 Tbsp
- pepper - 1/8 tsp
- onion, diced - 1 item
- green pepper, diced - 1 item
- stalks celery, diced - 2 item
- green beans, trimmed - 1/2 lb
- can tomatoes, drained and coarsely chopped - 1 oz
How to make creole green beans:
Cut the beans in half crosswise and then lengthwise (as for French-cut beans). Place in large saucepan. Add water to cover. Bring to a boil and cook, covered, until beans are tender. Drain and return beans to the pot.In a large skillet, saute the celery, green peppers and onions in oil until tender and light brown. Add the tomatoes and simmer, uncovered, 15 minutes or until most of the liquid has evaporated. Add sauteed vegetables to the pot with the beans, along with the sugar, salt and pepper. Heat through.
