Ingredients/Components

  • sugar - 1 c
  • vanilla - 1 tsp
  • butter or margarine - 3/4 c
  • can sweetened condensed milk - 1 oz
  • tsp salt - 1/8 item
  • firmly packed light brown sugar - 1 c
  • pecan pieces - 3 c
  • Almond extract - 1/2 1

How to make creamy pralines:

Grease wax paper with butter and set aside. Cut butter or margarine into 1/2 inch pieces. Combine sugar and next 5 ingredients in large heavy saucepan. Cook over low heat stirring gently, until butter melts. Cook over medium heat, stirring constantly until mixture reaches ball stage on candy thermometer reads 238° (about 15 minutes). Remove from heat, stir in pecans and flavorings.

Beat with wooden spoon until mixture begins to thicken. Working rapidly drop by Tbsp. on waxed paper. Let stand until firm. Yields 4 dozen.
