Ingredients/Components

  • milk - 2 c
  • salt
  • light cream - 2 c
  • pepper - 1/2 tsp
  • chopped onion - 1 c
  • chopped celery - 1/2 c
  • shredded Cheddar cheese - 1 item
  • sliced carrots - 1/2 c
  • slices bacon - 6 item
  • parsley sprigs - 1 item
  • potatoes about 5 large - 6 c

How to make cream of potato soup:

Cook potatoes and carrots in boiling water until tender. Drain. Cook bacon until crisp. Drain and crumble. Saute and celery in 2 tablespoons bacon fat. Combine cooked vegetables, bacon, salt, pepper, milk and cream. Simmer for 30 minutes. (Do not boil.) Garnish with shredded Cheddar cheese and parsley. Yields 2 quarts.
