Cream of potato soup
Ingredients/Components
- milk - 2 c
- salt
- light cream - 2 c
- pepper - 1/2 tsp
- chopped onion - 1 c
- chopped celery - 1/2 c
- shredded Cheddar cheese - 1 item
- sliced carrots - 1/2 c
- slices bacon - 6 item
- parsley sprigs - 1 item
- potatoes about 5 large - 6 c
How to make cream of potato soup:
Cook potatoes and carrots in boiling water until tender. Drain. Cook bacon until crisp. Drain and crumble. Saute and celery in 2 tablespoons bacon fat. Combine cooked vegetables, bacon, salt, pepper, milk and cream. Simmer for 30 minutes. (Do not boil.) Garnish with shredded Cheddar cheese and parsley.
