Ingredients/Components

  • eggs - 2 item
  • milk
  • flour - 1/4 c
  • cooking oil - 1 Tbsp
  • margarine - 1 Tbsp
  • 5 oz
  • pepper - 1/2 tsp
  • small onion, chopped - 1 item
  • salt to taste - 1 item
  • stalk celery, chopped - 1 item
  • fresh broccoli, chopped - 2 lb

How to make cream of broccoli soup:

In a deep saucepan, heat butter and oil to medium. Add onions and celery and stir. Cook 5 minutes. Dust on flour and mix well. Add broth, 2 cans of water and broccoli. Stir and bring to boil. Reduce heat to low, cover and cook 15 minutes.

In a blender, puree hot broccoli mixture (small batches, not all at once) and return to cooking pan. Beat together eggs, milk and seasonings. Add to broccoli mixture. Reheat, but do not boil. (Eggs will separate if overheated.)
