Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- milk - 1 Tbsp
- salt - 1/2 tsp
- flour
- grated carrots - 1 c
- baking powder - 1 tsp
- baking soda - 1 tsp
- powdered sugar - 1 item
- cooking oil - 2/3 c
- margarine - 1 Tbsp
- crushed pineapple with juice - 3/4 c
- Frosting:1 small cream cheese
How to make carrot pineapple muffins:
Frosting:1 small cream cheese1 Tbsp. margarine1 Tbsp. milk1 tsp. vanilla powdered sugar Mix together flour, baking powder, baking soda, salt, cinnamon and sugar. Make a well in dry ingredients. Combine oil, carrots, eggs, pineapple and vanilla, pour into well in dry ingredients. Mix just until moist. Spoon batter in cupcake pan until 1/2 full. Bake at 350° for 25 to 30 minutes.Frosting: Mix together cream cheese, margarine, milk, vanilla and enough powdered sugar for a thick creamy frosting.
