  • each diced leek, onion and celery - 1/3 c
  • broccoli, diced - 1 c
  • butter - 3 Tbsp
  • flour - 3 Tbsp
  • chicken stock - 3 c
  • light cream - 1 c
  • salt, pepper and thyme - 1 item

How to make cream of broccoli soup:

Melt butter. Saute vegetables 5 minutes over low fire. Blend in flour. Then add chicken stock. Bring to a boil. Season and let simmer until vegetables are tender. Add cream. Perfect for a cold winter afternoon.
