Ingredients/Components
- each diced leek, onion and celery - 1/3 c
- broccoli, diced - 1 c
- butter - 3 Tbsp
- flour - 3 Tbsp
- chicken stock - 3 c
- light cream - 1 c
- salt, pepper and thyme - 1 item
How to make cream of broccoli soup:
Melt butter. Saute vegetables 5 minutes over low fire. Blend in flour. Then add chicken stock. Bring to a boil. Season and let simmer until vegetables are tender. Add cream. Perfect for a cold winter afternoon.Recipe categories: Soups & stews, Bisques/cream soups, Broccoli.
