Ingredients/Components

  • salt - 1 tsp
  • hard-boiled eggs, chopped - 5 item
  • mayonnaise
  • can evaporated milk - 1 oz
  • minced parsley - 1 Tbsp
  • cayenne - 1/4 tsp
  • finely chopped onion - 2 tsp
  • black pepper - 1/4 tsp
  • cooked rice - 1 c
  • shredded sharp cheese - 1/2 c
  • flaked crab meat
  • crushed tarragon - 1/8 tsp

How to make crab and rice casserole:

Combine first 3 ingredients in a bowl. Blend together all remaining ingredients except cheese. Turn into the crab-rice mixture. Mix well until blended. Place in buttered casserole dish. Sprinkle with cheese. Bake 25 minutes at 350°.
