Cowboy stew
Ingredients/Components
- salt - 1 tsp
- pepper - 1/4 tsp
- chili powder - 1 Tbsp
- can whole kernel corn, drained - 1 oz
- chopped green pepper - 1/2 c
- clove garlic, crushed - 1 item
- slices bacon - 6 item
- 13 oz - 1 (1
- ground chuck or round
- cubed, pared potatoes - 2 c
- red kidney beans, drained - 1 can
- sliced onion 1 large - 1 c
How to make cowboy stew:
Cook bacon until crisp; drain on paper towels. Crumble; reserve. Saute onion, green pepper and garlic in bacon drippings until tender. Add ground beef; cook until well browned, breaking up with fork as it cooks. Add tomatoes, salt, pepper and chili powder. Cover; simmer 30 minutes. Add vegetables; simmer 15 minutes.
