Cottage cheese loaf
Ingredients/Components
- walnuts, chopped - 1 c
- Special K cereal - 3 c
- low-fat cottage cheese - 2 lb
- onion, chopped - 1 item
- corn oil - 1/4 c
- envelope dry onion soup - 1/2 item
- George Washington broth - 2 pkg
- Scramblers or Egg Beaters* - 4 8
How to make cottage cheese loaf:
*May use 1 to 2 blocks firm tofu and omit eggs and cottage cheese.Mix all ingredients well and bake at 350° for 1 hour.
I put all ingredients except cottage cheese and cereal in blender and run for a short time before adding all together. This saves chopping the onion and nuts.
