  • sugar - 1 Tbsp
  • red wine vinegar - 1/3 c
  • medium onion - 1 item
  • olive oil - 1/2 c
  • green bell pepper - 1 item
  • celery stalk - 1 item
  • mustard powder - 1 tsp
  • corn kernels defrosted or drained can

How to make corn relish:

Peel the onion, leaving a little of the root attached, and cut it lengthwise in half. Lay each onion half flat on the chopping board and slice horizontally, then vertically toward the root, leaving the slices attached at the root end. Finally, cut across to make dice. Peel the strings from the celery stalk with the vegetable peeler. Cut the celery stalk across into thin slices.

Dice the bell pepper. Put the corn, onion and celery in a large bowl and add the bell pepper. Combine the ingredients thoroughly, using the large metal spoon. Put the oil, sugar and mustard powder in a medium bowl with salt and pepper. Pour in the vinegar. Whisk the dressing ingredients together and pour over the vegetable mixture. Toss the vegetables in the dressing until thoroughly mixed. Season to taste. Cover and let stand at room temperature to allow the flavors to mellow, 2 to 4 hours. Serves 8.
