Ingredients/Components

  • sugar - 1 Tbsp
  • sour cream - 1/4 c
  • salt - 1/2 Tbsp
  • dry mustard - 1/2 tsp
  • red wine vinegar - 1/4 c
  • hard-boiled eggs, chopped - 4 item
  • olive oil - 1 c
  • black pepper - 1/4 tsp
  • slices bacon, cooked and crumbled - 6 item
  • fresh spinach - 10 oz
  • whole fresh mushrooms, sliced - 10 item

How to make mushroom salad:

Toss spinach, mushrooms, chopped eggs and crumbled bacon. Whisk remaining ingredients together. Toss with vegetables to coat spinach. Yield: 8 servings. Carbohydrate 5 g, protein 6 g, fat 33 g, calories 333.
